And Is There Honey Still For Tea ...

Winnie the Pooh and I have one thing in common
we both love honey
...but I like mine on crumpets
In the picture you can see a tin of honey
Greek Honey
that a friend brings back from Greece where she goes on holiday.
But there is another type of honey
that you may not have heard of
PARSLEY HONEY
I found this recipe a few years ago in an old wartime cookbook
  • 5oz parsley (including stalks)
  • 1.1/2 pints of water
  • 1lb sugar
  • 1/2 teaspoon vinegar
Pick parsley and wash well.  Dry and chop stalks up roughly.
Put into pan with 1.1/2 pints of boiling water and boil until it reduces to a pint.
Strain.
Add 1lb. sugar and boil until syrupy (like honey) about 20 mins then add
1/2 tsp of vinegar.
Pour into pots and cover.
This jells by the next day and tastes and looks just like heather honey.
Don't ask me how or why - it just works.

  3. I'm afraid that i have a very sweet tooth Flighty - and the parsley honey is delicious.

    Catherine - you're right, maybe I am pushing it a bit - I'm thinking of giving this one up as no one seems interested.
